Truly a place to remember!
Without a doubt, I could easily tell that this is not just a business to Mary and Bill, but more of a passion that is integrated into their daily life. The food was amazing, ingredients obtained from local markets and farms, and the eggs, sausage and bacon came right from their backyard. The house is cleaned with all-natural solutions, as the owners are very much attuned to the importance of environmental responsibility and sustainability. We will definitely come back to Thyme in the Country on future getaways, and will wholeheartedly recommend this B&B to our friends and family.

Mary is a wonderful host who goes out of her way to make you comfortable and strikes a perfect balance between remaining in the background and really engaging with her guests. We enjoyed our breakfast chats and the advice she gave about the area and her home. She is a fantastic cook/chef and made us two delicious breakfasts all with locally (including from their own amazing veg garden) sourced ingredients. Her husband Bill and her work as a perfect tandem to keep everything running like clockwork. For our first morning they set up a table for 2 in the middle of the vegetable garden - we felt so special and like part of the family. The breakfast was a 3 course feast: swiss chard casserole topped with farm fresh eggs, beets with goats cheese, a cherry and mint delight and a homemade blueberry coffee cake. Easily good enough to grace the tables of Manhattan's best restaurants!
My wife and I choose Thyme in the Country as the location for our first wedding anniversary and we could not have picked a more special and idyllic place. This is so much more than a Bed and Breakfast and you should make it your first choice when looking for an overnight stay in the area.
One can see... green meadows, farm animals, an inviting salt water pool, a relaxing hammock, blooming flowers, vegetable gardens, a badminton court, a chicken coup & very hospitable hosts....Mary & Bill.
It's very peaceful here. You can walk all over and breath in fresh air. Mary and Bill are wonderful hosts. I love the rustic food they serve using homegrown ingredients. I would definitely come back.
The food tastes... fresh & delicious. Mary is an excellent & creative cook.
One can touch... fresh warm eggs from the chickens ,home made soaps, comfy blankets, fresh garden vegetables & herbs, fruit from the trees & two small friendly dogs.
One can smell... clean fresh air, flowers in bloom , wood crackling in the fireplace and good home cooking...
I have stayed at Thyme in the Country several times now and have loved every minute of it! Mary and her family are incredibly friendly, accommodating, and committed to making your stay as comfortable as possible. There are endless things to do around the house and farm--during my stay I helped to feed the new calf, collected eggs, and walked in the beautiful pastures behind their home. When I most recently stayed this winter, I spent a lot of time next to their fireplace relaxing with a book. Mary and her daughter Jennie cooked us breakfast in the mornings and it was fantastic! They served me and my boyfriend homemade yogurt, apple sauce, the fluffiest pancakes, and bacon that came from their own pigs. We will definitely be back in the Spring.
We selected to stay in the 'Eco Lodge' and it gave us a little more privacy and was beautifully structured and designed. It is easily close enough to still give you the bed and breakfast feel. Swimming in the pool was relaxing and then we took a little picnic up on the farm's hill while watching the sunset over the Catskills. This place is great!
My girlfriend and I spent a full weekend at Thyme in the Country B&B, and were charmed from the moment we got to the house late Saturday afternoon. The rustic scenery, the land and farm animals, and the way the house and outside shed were decorated gracefully with antique furniture, tools and wall hangings brought us to a completely different place and time. The owners are extremely hospitable, and we felt right at home as soon as we entered the house. We were pleasantly surprised by the evening snack tray and honey-ginger tea that filled and warmed our bellies from the cold weather, as we really expected nothing more than a breakfast, typical of most B&B places.
We cannot find enough superlatives to describe our experience from the start to the end and we will look forward to our paths crossing again with Thyme in the Country. Thanks to Mary and Bill!
